Overripe Bananas? Two Ways to Make Them Delicious!

I love bananas, but I don't always get to them before they get all freckled and overripe. Bright side, this is the best time to make banana bread. I had six bananas, so I doubled my recipe and split it in half. One with chocolate chip and one without turned into baked French toast. Check out the recipes below!
Chocolate Chip Banana Bread
1½ cups flour
½ cup sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt
2 eggs beaten
¼ cup of Oat milk(your preference)
1 cup of mashed banana(3)
½ cup of coconut oil(or butter) melted
1 tsp vanilla
1 cup of semi-sweet chocolate chips
Mix all dry ingredients.
Beat eggs and mash the bananas.
Mix the mashed bananas into the beaten eggs and add vanilla. Whisk banana mixture into dry ingredients until almost combined. Then pour in melted coconut oil or butter until combined. Finally, toss in chocolate chips. Pour batter into a greased and floured bundt and bake until a toothpick comes out clean. Approximately 35-45mins
Glaze
¼-½ cup maple syrup
1 tsp cinnamon
powdered sugar
Mix all ingredients until you have a nice thick glaze. I eyeballed the powdered sugar 🤷🏾♀️ sorry, no exact measurement. When the cake is cool, pour on as much or little as you like.
Banana Bread Baked French Toast
Bake the other half in a loaf pan. Cool and slice them to maybe 1 inch thick.
2 eggs beaten
1 cup of oat milk(or your preference)
1 tsp cinnamon
½ tsp allspice
½ tsp of nutmeg
1-2 Tbsp of brown sugar
Crumble top
½ cup of oats
½ cup flour
Cinnamon
¼ cup sugar
4-6 Tbsp Coconut oil or butter
Mix all ingredients. Dip sliced banana bread and place in greased baking pan. Prepare the crumble by mixing all ingredients until you have pea-sized crumbs. Then top French toast with crumble and bake for 45min. Now grab your maple syrup and enjoy!
